Black Fig Tarte Tatin with Goat Cheese Sorbet
We always serve a tarte tatin at Lark, changing the fruit throughout the year to reflect the season: apple, pear, quince, pineapple, apricot, nectarine, and peach see a bit of time on the menu. But the fig tatin that we usually serve in August and September seems to be the favorite; people plan their visits to Lark around it. The combination of goat cheese sorbet, grappa caramel, and fig is a winner.
